Medifast Pancakes

As a busy work from home mom, the last person I think about is myself. Lunches are packed for the kids, leftovers stored for my husband, and as for me? Well, it’s usually whatever I can rummage around for in the pantry. A lost bag of fruit snacks, a bowl of cereal, or maybe a frozen burrito. It’s because of this that I love having my Medifast meals on hand. I don’t even need to think about it. I can take care of everyone else and myself without skipping a beat in my crazy full mom brain.

Most of my meals come in envelopes and are in powder form. All I need to do is add water and heat up the contents, which is convenient for me as a busy work from home mom. One of my favorite Medifast breakfasts are the pancakes.

To whip the pancakes up, I start by emptying my packet into a shaker jar.

Next I add a quarter cup of cold water and close the lid.

I give it about five real good shakes, ensuring not to over mix.

And then I pour the batter into three separate pancakes over a griddle.

Once bubbles start to appear in the center, I flip them over and let them finish cooking for about another minute before removing them onto my plate.

Finally, I drizzle them with some of the Medifast Sugar-Free Syrup before enjoying my tasty breakfast.

They look delicious (despite my poor pancake flipping skills!) because they totally are delicious. The Medifast program offers plenty of options for even carb-lovers like me by creating choices like these pancakes to help us adjust to a new, more portion-controlled lifestyle.
