Cowboy Casserole is a family favorite and a great go to recipe I use on busy weeknights. Tuesdays are typically our busiest days because we host our church community group in our home, so dinner needs to be quick and clean up needs to be quick so that our home is put together in time for our evening meeting. This Cowboy Casserole is on regular rotation with a hefty side of steamed green beans. While the green beans are never given a warm welcome on the plates of my boys, the Cowboy Casserole is always a hit with the kiddos. It’s a quick dish to make and while it leaves behind a gooey cheesy mess in my pan afterwards, clean up is a breeze when I use new Scotch-Brite® Scrubbing Dish Cloths, which makes this a perfect weeknight meal solution.

To start, I brown some ground beef with some onion in a large skillet. I feel like all good recipes usually begin with an onion in a pan, is there any better smell?

Once the beef is thoroughly cooked, I drain the grease and add in some corn, cream of mushroom soup, a little cheddar cheese, milk, some garlic and onion powder, and salt and pepper to taste and mix it all together.

I know it doesn’t look pretty, but I promise it tastes much better than it looks!

Then I transfer the beef mixture to a large baking dish and spread it evenly.

Next comes the tater tots over the top of the beef mixture in a single layer.

And more cheese, of course.

And then it gets placed in a 375F degree oven for about 30 minutes, uncovered. Before serving I like to add a touch of color by adding a few chopped leaves of parsley.

This dish is definitely a hearty comfort food. It’s a stick-to-your-stomach dish, as my grandma would call it. It makes a great casserole dish to bring to a potluck or barbecue since it travels well and stretches for several people easily. It’s one of my top kid-friendly meals and most requested by my picky little dudes.

Once our meal is done, I know I have a crusty cheese pan to wash up after. Boo yah, cheese! Came. Saw. Conquered. I’m a mom. This is how I get my kicks.

After washing a pan like this one, which required a little extra care, I always like to refresh my garbage disposal with a little baking soda, vinegar, and lemon.

I just add a couple of heaping tablespoons to the disposal.

And then about a half a cup of vinegar.

It fizzes up like those middle school science projects, but these bubbles help reach ever corner and crevice of my garbage disposal.

And then I quarter a lemon, drop each one into the disposal one at a time, and turn on the disposal.

It’s a little trick I learned in my single mom days living in an apartment. I had an awfully stinky garbage disposal and this always did the trick of eliminating the smell and getting it all spic and span after a heavy dish night.

Cowboy Casserole

Ingredients
  • 1 pound extra lean ground beef
  • 1/2 cup onion, diced finely
  • 1 can (15 oz) corn, drained
  • 1 can (10.75 oz) cream of mushroom soup
  • 1 cup cheddar cheese, shredded
  • 1/2 cup milk
  • 1/4 cup sour cream
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • salt and pepper to taste
  • 1 bag (16 oz) frozen tater tots
Instructions
  1. In a large skillet, cook beef and onion over medium heat until beef is cooked through.
  2. Remove from heat, drain grease and stir in the corn, soup, half of the cheese, milk, sour cream, and seasonings.
  3. Pour beef mixture into 9×13 baking pan.
  4. Add tater tops over the top, keeping them in a single layer, and then sprinkle remaining cheese on top.
  5. Bake uncovered in a 375F degree oven for 25-30 minutes or until cheese is bubbly and tater tots are thoroughly cooked.
