My summer mornings are spent feeding five hungry mouths and by the time I’m finished tending to the needs of my children, I’ve completely forgotten to feed myself. I believe this to be a problem most moms have and by late morning, our grumbling stomachs demand food. In turn, we reach for the easy-to-grab-and-eat snacks rather than a breakfast that will energize us and help us get through our mornings without that familiar tummy growl.
To help me choose a better-for-me morning food, I whip up a big batch of these Simple No-Bake Energy Bites that are super tasty (who doesn’t love chocolate in the morning?) and help me stay energized without that pesky crash. They store easily in the fridge, so I can quickly grab one as I’m putting away the milk from morning cereal for the kids.
To start, put some peanut butter, honey, and vanilla into a mixing bowl and combine.
Once that’s done, add some oats, shredded coconut, ground flaxseed, and miniature chocolate chips and stir until everything is evenly coated.
Transfer your bowl to the fridge for about ten or so minutes just to make the mixture easy to mold.
Start molding the mixture into small, bite-sized balls and transfer them to a container with an airtight lid.
These are stored in the fridge and can be eaten one or two at a time for a morning kickstart. They’re really yummy and it almost feels like eating cookie dough for breakfast!

- ½ cup creamy peanut butter
- ⅓ cup honey
- 1 teaspoon vanilla extract
- 1 cup quick cooking oats
- ⅔ cup shredded coconut
- ½ cup ground flaxseed
- 6 tablespoons miniature chocolate chips
- In a mixing bowl, stir together peanut butter, honey, and vanilla.
- Add remaining ingredients and combine until evenly coated.
- Transfer mixture to fridge and chill until easy to shape.
- Remove from fridge and roll into one inch balls.
- Store in fridge in an airtight container.
