It’s officially October! And although I’ve been sneaking little signs of Halloween into my home for several weeks now, I’m taking these first few days of the month as a green flag to immerse myself in all things Halloween. Look out people, I’m raising the freak flag, slipping on my Halloween socks, & getting spooky up in the Sosa house!
Right around this time of year, we start to see popcorn balls popping up (ha! see what I did there?) everywhere. It’s a Halloween classic & for good reason, they are so darn tasty & such a fun treat for the kids. These are fairly simple to make & don’t require too much fuss. Plus, they are easy to doll up for any holiday, but especially Halloween.
INGREDIENTS (makes roughly 12-14 balls)
- 2 cups sugar
- 1 1/3 cups water
- 1/2 cup light corn syrup
- 1 teaspoon white vinegar
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 18 cups of popped popcorn (the kind on your stovetop works best)
- In a medium saucepan, combine your sugar, water, corn syrup, vinegar, & salt over high heat. Once the temperature reads 300 degrees on your candy thermometer (this may take awhile), add in your vanilla. Pour all over your popcorn & toss it gently to coat as evenly as you can get it without burning yourself. Once the mixture has cooled down enough, add in some sprinkles & give it another good toss. The cooling down process happens very quickly, so stay with your popcorn! Then, use your hands to form into about four inch sized balls. Use gloves or a handy husband with tough hands (like I did!) to help with this part. Greasing your hands helps with this as well. It can get sticky! You can cool completely on waxed paper. If you want to get really creative & fun, stick a fun straw or lollipop stick in them before letting them set for popcorn pops!
